Duo of Soufflés serves two

 Triple shot of Orange and Grand Marnier

4 tablespoons crème patisserie
4 egg whites whisked
1 tablespoon of orange compound
1 tablespoon of fresh passion fruit

Garnish – homemade orange & passion fruit ice cream
For this you will need an ice cream machine,
1 litre of milk
Whisk together 300g sugar & 12 egg yolks
1 tablespoon of glucose
250 cream
Add the flavouring of the orange and passion fruit for this you must taste as you go along as some fruits are more sour than others.

  1. Put 2 tablespoons of crème patisserie into each bowl (1 bowl per person)
  2. 2 eggs whites whisked into each
  3. Add flavouring (orange, passion fruit, orange & grand mariner)
  4. Spoon into a buttered & sugar mould and cook at a high gas in Bain- Marie
  5. Garnish with homemade orange and passion fruit ice cream
